Easy-make biscuits for children

Harry has been off school the last couple of days because of sickness. Yesterday he was really poorly and just wanted cuddles on the sofa, which I was more than happy to supply as I didn't feel well myself! Today he is pretty much back to his normal self and is really only off school because of the 48 hour sickness rule so he has been much more active and needed occupying so we made some biscuits.

I was sent this recipe a few years ago and it's my favourite as it's so simple and easy for the children to make that they need very little help.

Basic Biscuits
2ozs caster sugar
4ozs butter or margarine (we use Bertolli spread as it's soft and makes mixing easier for the children)
6ozs plain flour

Pre-heat the oven to 150 decrees celsius/Gas Mark 2

Cream the butter and sugar together until it's light and fluffy. Stir in the flour and once mixed knead the dough together until it forms a ball. Add a little flour if the dough is sticky.

Roll the dough on a lightly floured surface until it's about 5mm thick. Cut out biscuits using cookie cutters. We had a mixture of letters, stars, gingerbread men, mice and motorbikes!

Place the biscuits on a baking tray covered with greaseproof paper and bake in the centre of the oven until golden brown.

Once baked place the biscuits on a cooling rack before decorating.

We like to use a sprinkle of icing sugar, especially when making Christmassy biscuits, as the children think it looks like snow! It's a very simple decoration but looks so pretty.

My Mum bought us the Whitworths Twist And Sprinkle Icing Sugar to try and it works really well for the children as it gives them more control over where the icing sugar goes and gives a better covering than when using a sieve (and it means less mess for Mum to clean up!!)

They passed Harry's taste test and he really enjoyed making them especially as he could do most of the tasks by himself.
